Harvested wheat in the barn is milled as locally as possible. Sometimes oats are an alternative grain. In the 1990s five or six people would have been working at harvest-time. Today William Lee, the farm manager, carries out the tasks all year round and employs two essential staff members in the busiest months. The harvester calculates yield per acre as it cuts the crop.
